Why do some gel and some not?
Last summer I worked at a summer camp and we had a surplus of small containers of grape juice (plastic "Cup" with a cover foil). I brought some home and put them in my freezer to eat as the slurry / popscicles later. The next day when I went to one out, I noticed that most were frozen, but some were completely liquid. I left them in the freezer and never frozen. Their position in the freezer is not a problem because they were right next to cups which have been frozen. Without knowing the composition, can someone tell me why some (with supposedly the same ingredients - almost all, if not 100% grape juice) was frozen and not others? (asking for again because I did not answer)
In the absence of any anomaly, it seems that this should be due to solutes dissolved in juice. Colligative properties such as depression of the freezing point should be taken into account. To my way of thinking, this is the only "chemical" explanatory. The depression of freezing point is given by the equation of change in temp = IKm where i is related to the number of ions of the solute, K is the freezing point constant, and m is molality, which is related to the amount of a solute is dissolved in grape juice.
